All-Purpose Baking Mix

Whether you call it baking mix, dry mix, or quick mix, this is some handy stuff to keep around! It can be used to make biscuits, cookies, coffee cake, pancakes, waffles, fried chicken, or darn near anything you please! (Disclaimer: baking mix cannot be used to make unicorns. It's good, but nothing's that good.)

What you will need:
Flour
Salt
Baking powder
Shortening
A large bowl
A spoon or other means of mixing your dry ingredients
A pastry blender
Appropriate measuring cups and spoons
A large zip-top bag


Recipe:
6 cups all-purpose flour
3 Tbsp baking powder
1 Tbsp salt
1 cup vegetable shortening

Measure your dry ingredients into your large bowl and mix thoroughly. The original recipe I used said to sift the dry ingredients three times. This isn't necessary, and makes for more work and more cleanup. A wooden spoon will work fine, but if you really want to be thorough you can use a wire whisk.




Next, measure out your shortening. If you don't already have one, invest in a plunger measuring cup. They are the best for difficult to measure substances such as shortening, peanut butter, ketchup, or honey.









Using your pastry blender, cut in your shortening until the mixture resembles fine crumbs. Store your concoction in a zip-top bag in the refrigerator. Anytime you come across a recipe that calls for baking mix, you've already got it on hand!
